Epic Grilled Veg and Smoked Oat Cheese Wrap

A veggieful vegan wrap made with deli-style roasted eggplant, capsicum, zucchini, mushrooms, parsley and Smoked Oat Cheese Slices, grilled, for that complete Mediterranean smoky grill flavour.

Makes 1


2 (5mm) thick slices Lauds Smoked Oat Cheese
1 large wrap
2 slices roasted eggplant*
2 slices roasted capsicum*
4 slices roasted zucchini*
5 deli-style marinated mushrooms, sliced*
1 tbsp chopped parsley


  1. Heat a grill pan or skillet over medium heat. Add Smoked Oat Cheese slices and cook for a minute on each side. Remove pan from heat and set aside.
  2. Place wrap on a plate and arrange eggplant, capsicum, zucchini and mushrooms in a layer in the middle. Top with grilled cheese and sprinkle with parsley. Fold overhanging wrap over the top and place in a sandwich press.
  3. Cook for 3-4 minutes until the wrap is golden and the fillings warmed through. Cut in half and serve.

*Note: you can purchase deli-style veggies from most supermarket delis. Otherwise, you can buy whole veggies, slice, rub with olive oil and grill over high heat for 4-5 minutes until tender and lightly charred.
