
Loaded Nachos
These Loaded Nachos are sure to be a crowd pleaser. Spiced beans, the gooiest cheesy sauce, guacamole and fresh salsa- what more could you want?! The perfect lunch or dinner to enjoy solo, with family or friends.

Ingredients
Spiced Beans
Oil or water, as needed
1 tsp smoked paprika
1 tsp cumin powder
1 tsp garlic or onion powder
1 tsp oregano leaves
1 x 400g can black beans, drained well
1 x 400g can crushed tomatoes
Salt and pepper, to taste
Cheesy sauce (or use 200g Original Oat Melt, finely grated)
200g Original Oat Melt
½ – 1 cup dairy-free milk, or as needed
Guacamole
1 avocado, flesh only
Lime juice, to taste
1 tbsp fresh coriander, chopped finely
Salt and pepper, to taste
Fresh Salsa
1 tomato, diced
150g corn kernels
2 tbsp fresh coriander, chopped finely
Lime juice, to taste
To serve
200g vegan-friendly corn chips
2 tbsp fresh coriander, chopped finely
Method
- Preheat oven to 180C.
- To prepare the beans:
Add the oil or water to a large saucepan over high heat. Add all spices and sauté for 30 seconds or until fragrant. Add the black beans and tomatoes and sauté until the mixture is thick and heated through. Season with salt and pepper and set aside. - To prepare the cheesy sauce:
Add all ingredients to a small saucepan over low heat. Heat until the mixture is combined and forms a smooth sauce. Add more milk to achieve your desired consistency. Set aside. - To prepare the guacamole:
Add all ingredients to a bowl. Mash the avocado with the back of a spoon until chunky. Season with salt and pepper and set aside. - To prepare the salsa:
Add all ingredients to a bowl and toss until combined. Set aside. - To assemble the nachos:
Add the corn chips to a large baking tray. Top with the spiced beans and the cheesy sauce or grated Original oat Melt. Bake in the oven for 15 minutes or until heated through. - Top the nachos with guacamole and salsa. Enjoy immediately!
